Moved into a home with a Lacanche - questions!

We just moved into a home with a Lacanche range. Honestly I am so intimidated by it! I'm not sure which one I have - can someone help me identify it? (photos) I think it may be a Change 1400.

Also, what is the best way to get to know the range (besides cooking lol). How do you use the different ovens? How about the top? It looks like I have a French simmer plate - how do you all use that? Has anyone changed it out for just the burner? Or do I just take off the plate for that?

It is such a beautiful range but I'm missing the simplicity of the blue star in my old home.
